Not sure (need help, please!!!)

I hope I am not mixing two movies here (in my mind), but the movie I am looking for involves a Shaolin monk (I think) who ultimately has to face the white-haired evil master. However, there is a part of the movie where he has to practice using a kind of dummy/mannequin that has ball-bearings that come out if he hits certain points. He has to do this because the evil master has a particular weak spot and this is the only way he can learn to defeat him.

If I remember correctly, this guy spends a lot of the movie wearing a sort of robe, and his fighting style involves a lot of dodging and ducking back instead of just always using hand/feet contact fighting. I also think he was bald (not sure if it was Gordon Liu).

I have been looking for this movie for a long time and would love it if you could guide me the right way. Thank you for your help.
